hot chocolate - french style


autumn is well upon us here and since i have not yet turned on the heat i need something to keep me warm. this recipe comes originally from The Scented Home: Natural Recipes in the French Tradition but i have altered it to suit my own tastes.

hot chocolate
3-4 oz milk or dark chocolate or a mix as you prefer
2 cups whole milk
1 to 2 pints of heavy cream or half and half as you prefer
2 tbl butter
cinnamon and/or belgian cocoa powder to taste if you wish for a bit more zip

melt chocolate and other ingredients in a heavy pot on medium heat, the raise the temperature to high whisking until it begins to boil. turn heat to low and let simmer 5 minutes. serves 1 to 4 depending on how thirsty or cold one is. i serve it in bowls in the french style. good with brioche as well.
