this is a recipe also from my new rice and risotto cookbook.
crab friend rice
3/4 cup long grain rice
2 tbl oil
1 can crab meat
1 leek, sliced
1/2 cup bean sprouts
2 eggs, beaten
1 tbl soy sauce
2 tsp lime juice
cook rice in a pan of lightly salted boiling water for 15-20 minutes or until done. drain, rinse and set aside.
heat oil in a skillet or wok until very hot and add crab, leek and bean sprouts, stir-frying for 2 to 3 minutes then remove and set aside.
add eggs to wok and cook, stirring for 2 to 3 minutes until starting to set. stir rice and crab mixture back in with the eggs and add soy sauce and lime juice and cook for a minute more.
serves 4

That looks so easy and delicious. I have some leeks and crab; this will be something to try for lunch tomorrow...
