tonight's dinner - lamb meatballs with couscous


wanted something warm and hearty this evening so i made lamb meatballs (with diced onions, fresh parsley and my rose/thyme/cumin spice mix from the summer) fried in canola oil to brown them; then in oven for 20 minutes at 400F. paired it with couscous with fresh diced apricots, pineapple and golden raisins in it and topped with pistachios.
