tonight's dinner - duck with thyme infused honey & balsamic vinegar


found a packaged duck breast (1lb.) at the grocery the other day and decided to treat myself. while looking on the web for just what to do with it, i found this recipe over at The Splendid Table which i modified a bit with the addition of some clementine marmalade i made on saturday (luckily the thyme in my garden has just started to come up). the reduction turned out beautifully and the duck was great. this would probably work with chicken just as well for those on budgets.
