tonight's dinner - antipasto pasta oh



well its been some time since i did an entry on food on my blog. some things happened a few months ago and i've only just felt like doing this again now. so i present tonight's dinner for one

antipasto pasta

1 package fresh pasta (i chose a 4 cheese tortellini)
olive oil
2 cloves of garlic, minced
1 shallot, diced
1/4 cup italian salami, cut into chunks
5 sun-dried tomatoes, diced
5 artichoke hearts, cut into chunks (this and the tomatoes i got at the olive bar at the grocery store so i was able to pick out enough for one)
capers to taste
pepper to taste
pinch of dried oregano
2 tbl balsamic vinegar

while water for the pasta comes to boil, heat a saucepan with some good olive oil and add the garlic and shallots, cook under low heat for a few minutes until they start to soften. add salami and turn heat to medium, stir and heat thoroughly, then add the sun-dried tomatoes, artichokes, capers, pepper, oregano and balsamic vinegar, toss all to coat and let simmer on low heat while pasta cooks which, since its fresh, should only be a few minutes.

dredge a little more olive oil over everything, plate and eat. serves one for dinner plus lunch the next day unless you are very hungry. in which case make sure you have a large plate.
