at the grocery store the other day i picked up some woodear and shitake mushrooms along with some spanish chorizo not quite sure what to make with them.
after some deliberating i decided on stroganoff. this looked like a fairly decent recipe, though i ended up making some modifications to 'spanish' it up:
adding in the chorizo along with the beef, some good spanish port along with the broth, smoked spanish paprika instead of hungarian, and initially sauteeing the beef and then the onions in rendered duck fat which i just happened to have in the refrigerator waiting for a special occasion. and yes that is rotini instead of egg noodles.
all in all an ok recipe. i think next time some chopped parsley on top would help
