i bought a cookbook the other day with recipes in it using honey (i am an unabashed honey connoisseur. as others are with wine or coffee, i am with honey) and this recipe looked very interesting. the cake comes out very light in texture but full of flavor.

3/4 cup sugar
3/4 cup oil
1 cup honey
1 tbl baking soda
1/2 tsp cloves
2 tbl cocoa powder
1 tsp cinnamon
2 cups flour
1 cup boiling water
Preheat oven to 375 degrees F (190 degrees C). Grease your pan beforehand (the recipe calls for a 12" x 12" round pan but used a 9" x 12" and the amount leftover was put into a small baking pan as seen above). Mix eggs with sugar. Add remaining ingredients in the following order: oil, honey, soda, cloves, cinnamon, cocoa and flour. Lastly, add boiling water.
Bake for 30 minutes at 375 deg F, then lower heat to 350 degrees F. (180 deg. C.) for last 10 to 15 minutes. Watch that it does not burn.
