tonight's dessert - caramelized mango tart


so as usual i am watching a cooking show but not really paying attention to how the whatever is being made and then i want to make it. this week i wasn't paying attention to rick bayliss on one of his shows cooking this tart for a 'mexican' brunch.

my version is

caramelized mango tart

1 sheet puff pastry set out in refrigerator to thaw

2 mangoes cut in strips and then cooked on a skilled with a generous amount of butter and a few tablespoons of good organic sugar until they are brown and caramelized

8-10oz of good dark chocolate cut into a fine dice and mixed with 2 tablespoons of cashew, almond or peanut butter

take puff pastry out of refrigerator just when you are ready to cook the tart (puff pastry is best cooked when it is chilled)
smear chocolate/butter filling on the pastry sheet, fold sides of pastry sheet slightly over the sheet to form a border. add mangoes on top and arrange artistically if you like

400 degree F oven for 20 minutes.
