tonight's dinner - beef and tomato streudel


i found a few final tomatoes lingering out in the garden so i used them to make a beef and tomato streudel tonight

the recipe such as it is:

1/2 lb flank steak, cut thinly - saute in oil to sear and get some color and flavor then set aside (2-3 minutes)

1/2 onion sliced into thin slivers - saute this in the same pan for about 10 minutes til the onions start to caramelize

add 2-3 tomatoes sliced thinly
1tbl capers
some salt and loads of pepper

cook for 10 minutes or so until excess moisture is absorbed

let cool for a few minutes

spread over a single sheet of thawed puff pastry dough along with the beef

cover with a second sheet of puff pastry, sealing the edges tightly

bake at 400degF for 25 minutes

should serve 4 very well
