tonight's dessert - cinnamon/honey gelato



having a requirement for something sweet last night and not wanting to go out in the snow i decided to make gelato with what i had in my cupboards.

cinnamon/honey gelato

2 cups milk
1 tsp cinnamon
1tbl vanilla extract
4 egg yolks (save the whites for an omelet of meringue)
1/2 cup honey

heat milk in saucepan until just the point of boiling. whisk 4 egg yolks until creamy and temper by adding 2 tbl of hot milk, whisk together and pour into saucepan with milk. add honey, cinnamon and vanilla and over very low heat stir frequently as custard cooks. it is done when it coats the back of a spoon.

cool down/chill and then pour into an ice cream maker.

if you dont have any ice cream maker, pour chilled mixture into a 9x12 glass pan and stir with a fork vigorously every 5 minutes or so to break up ice crystals until desired consistency is achieved.

Yum! I never seem to get good results without an ice-cream machine, but I might be willing to try again for this.
