tonight i played the old 'what do i have on hand i can make something out of' dinner game and decided on the following
balsamic chicken with mandarin oranges for 1
1 chicken breast or thigh
1 can mandarin oranges + 1/4 can of the syrup
2 cloves garlic
1/4 cup balsamic vinegar
throw everything in a skillet on medium heat til the chicken is done. plate the chicken and cook the rest til it reduces down to a thick sauce (i think i added the mandarin oranges too early though since they disintegrated, so you might want to add them towards the end). pour over chicken and eat.
