tonight's dessert - green apple and cider sorbet


flipping through the perfect scoop. the other day i turned to the sorbet section to start to try a few of those. sorbets use a simple syrup of water and sugar as a base and then various fruit juices and such are mixed in. this was fairly easy sorbet to make that i dressed up a bit with the addition of some orange zest.

this recipe used 2 cups of apple cider, 5 green apples, 1/3 cup of sugar and some lemon juice. boil cider and sugar then add apples and let steep on low heat for 5 minutes. remove from heat, let mixture cool. run it through a food mill, chill in your ice cream maker and serve
