rose hips


today's garden harvest was rose hips. cousin to apples, rose hips are high in vitamin C and can be used to make jelly, marmalade, tea and pickles. if you make marmalade, slice the fresh rose hips in half and remove the seeds and flower end. for every one cup of rose hips cook with one cup of brown sugar and enough water to cover. bring to a boil and let simmer til tender.

for tea they can be used fresh or dried. a couple of tablespoons per person should work nicely.
