i changed recipes from the last time i made caramels, because they did not come out soft enough. the recipe i used this time did come out softer, too soft actually, even though i brought them up to temperature.
not much else to do but dip them in chocolate of course. these are honey and rosewater caramels (very delicate flavor) dipped in a dark chocolate to help them keep their shape. some will be mailed out to lucky eaters within a few days. no sea salt on these this time just caramel and chocolate decadence
