tonight's dinner - roast pork and vegetables


yes its like 90 degrees here today and muggy so what do i do, roast a pork shoulder of course.

i made a rub for this with equal parts ground pepper, sea salt, smoked paprika, dried oregano and brown sugar and left it on the pork for about an hour before i roasted it.

45 mins or so in the oven at 375degF or until the pork is tender. roasted with diced carrot and onion.
