tonight's dinner - tapas pt. 1


i should really be more organized i suppose and do several tapas dishes from my new cookbook all in one night but i just shant, so there.

warm potato salad
from everyday tapas, parragon books, 2009

3/4 cup olive oil
1 lb of waxy new potatoes cut into wedges or thin slices
1/4 cup white wine vinegar
2 garlic gloves, finely chopped
salt/pepper

heat 1/4 cup of the olive oil in a saute pan until shimmering and hot. add the potato slices, season with some salt, and cook over low heat for about 10 minutes til they start to brown and soften.

in a small pan combine vinegar, garlic and pepper, bring to a boil, then stir in remaining 1/2 cup olive oil. let boil for a minute or two.

transfer potatoes to a shallow bowl and pour vinegar mixture over top, tossing gently. allow to stand for 15 minutes before serving on individual dishes.



good recipe. the vinegar adds a nice depth of flavor to everything
