i am trying to find some interesting things to do with the infused honeys i have been making. tonight i took 2 lamb chops, stuffing between them copious amounts of oregano, rosemary, garlic, pepper and salt, then tied them together. a quick sear followed: 20 minutes at 350degF in the oven.
after i pulled the pan out of the stove i drizzled rosemary honey over the roast lamb and let it melt into the lamb while the meat rested.
then i did copious amounts of eating.
